Chocolate is one of the great pleasures in life, and one of the great things about chocolate is that you can eat it raw!

Throughout history raw cacao has been used one of the most revered of all superfoods. Cacao literally means "Food of the Gods" and was once used as currency in Aztec culture and called Black Gold or Seeds of Gold by the Spanish. It was used in ritual and celebration, for mood elevation and stamina!

Eventually the raw cacao bean was combined with sugar which inhibited it's healing properties, and when processes that enabled cheap bulk chocolate to be made and combined with milk powder, the first milk chocolate bar was produced.

However in this state, the antioxidants and many of the nutrients are destroyed and the potency of this powerful superfood are all but lost.

But the tide has turned and raw cacao is making a come-back! Here are five reasons why raw cacao is better than processed:

1. Raw cacao is super rich in antioxidant flavonols making it one of the richest sources of antioxidants of any food. Antioxidants are destroyed by heating, so much of this benefit is destroyed in processed chocolate.

2. Raw cacao can be used medicinally with it's natural bitter flavour intact. Store bought chocolate is always combined with milk and sugar which changes its natural bitter flavour.

3. Raw cacao can be made into raw vegan recipes that are dairy free. Milk chocolate is made with extracted dairy solids containing casein - the animal protein in milk which causes many allergic reactions and excess mucous production in the body.

4. Raw cacao can be made into raw vegan recipes that are sugar free. To gain such a sweet taste, processed chocolate contains a very high sugar content, stimulating our taste buds and causing an addictive flavour. When you make your own raw recipes you can use natural sweeteners such as dates or raw honey, and use smaller amounts to regulate the sweet taste. After being on a raw diet for a while, you will not tolerate overly sweet flavours.

5. Raw chocolate tastes better! When you begin to experiment with raw chocolate recipes you will enjoy the richer, fuller flavour of the raw cacao bean containing it's full complement of vitamins, mineral, antioxidants and flavonols.
